No way out of the box to do this, some anti-spam products have the ability
to do selective journaling, the other option would be to create an SMTP
Event Sink that fires when messages from the address is question hit the
server.

I am looking for a way to get a copy of any emails from a specific email
address to anyone in my organization.
So, for example, I want to get a copy of any emails that are sent from
DisgruntledExEmployeeSlammingCompany@xxxxxxxxxxx to anyone in my
organization. I do not want to stop the emails, I want to let them through,
but I want to get a copy of it.
Any ideas?
