You can say "I like the blue color of the sky." You can
also say "I like the blue color" if are looking at a bunch
of colors and pointing out which you like. It sounds better
to say "I like the color blue" if you are making a general
statement about your preference in colors but I don't think
that there is any grammatical rule to govern this.
