If you say:" the blue color" blue is an adjective. Like:" the blue color of the sky made me quiet."

If you say "the color blue" blue is not an adjective but tells the
name of the color just like we say the letter B. Since blue here
is used as a noun we can also say "light blue".

So it is always the blue color of something and never the color
blue of  something.
