The main thing now is that I need a new soundcard with at least 4 inputs. I
don't have a great budget, so at this point the mixer features are less
important. 
Been looking at Focusrite Scarlett and Roland Quad-capture.
Any opinions on these ones? How easy are they to operate for us?

I don't suggest the Ultralite. It has built-in software menus that are
unusable. You can also control the mixing features from a computer-based
application, but its accessibility is quite poor, also. I think that HSC
sets were made for the PC-based mixer at one point. Still, it isn't a mixer
like you might think.

If mixer features are important to you, then the Mackie Onyx is where you
should look.
