Hi, and welcome to Cajun Cooking Recipes Newsletter, September 11, 2016.
I pray that everyone is trying to get their lives back together after this
devastating flood here in Louisiana. My heart goes out to you all. Also this is
the anniverary of September, 11, 2011, never forget!!

Today's Recipe:
Rabbit Gumbo
1 1/2 cups lard
1 tablespoon chopped garlic
1 1/2 cups sifted all-purpose flour
4 cups water
2 cups chopped onions
1/2 cup chopped celery
Louisiana hot sauce to taste or 1 teaspoon cayenne pepper
1 cup chopped green bell pepper
1 cup chopped celery
2 cups dry white wine
1 pound andouille or smoked sausage
One rabbit, cut into pieces
In a large pot, heat the lard over medium heat. Add the flour and stir
constantly to make a very dark roux, about the color of mahogany wood.
Add the onions, celery, and bell peppers and cook, stirring constantly,
until the vegetables are tender. Add the remaining ingredients and
cook, covered, until rabbit is tender, about 1 1/2 to 2 hours.
Serve over rice.
Today's Cooking Tip For Rabbit:
For safety, cook rabbit until it reaches 160 degrees F.

Baby Crawfish:
A baby crawfish and its mother were walking along a ditch when the baby
crawfish who had gone ahead, comes flying back down the ditch. The mother
followed and asked, "What is the matter?" The baby crawfish answers, "Look that
big thing right there." The mother says "Don't worry about that; it is just a
cow." So they keep walking. Then the baby crawfish comes flying down again. The
mother asked again, "What is the matter?" The baby says look at that thing
right there. The mother says "That is just a dog; it will not hurt you," so
they kept walking. Then suddenly the mother goes flying by the baby crawfish.
The baby crawfish asked its mother what's wrong, and the mother said, "Run!
That's a Cajun and they eat anything
