What features from iTunes do you need?  Is it just getting songs to and
from you iPod?  Do you need to be able to buy songs from Apple's store? 
How about organizing and playing music? 

I have an old iPod shuffle & moving songs to an from the iPod is as easy
as copying files and running a script (to update the playlist).  Other
iPods may be different, but I don't have another (if you donate one to
me, I'll investigate further =P). 

There are also many programs for organizing and playing music (I believe
one is included by default with Ubuntu). 

As for buying songs from Apple's store, I don't know of any great
solutions (but someone else might).  If you must run Apple's iTunes
software, two possible methods are to

    * run it in a virtual machine which runs Windows (I do this for all
      of the Windows-only programs that I use)
    * or run it in Wine, an application that allows other operating
      systems run Windows programs.  According to the Wine website
      <http://appdb.winehq.org/objectManager.php?sClass=application&iId=1347>,
      support for iTunes is mediocre.
