You might try "Fred's Head," a database of all kinds of things. go to www.aph.org and look for a link that says something about "Fred's Head."

I'm wondering how possible it is for a blind person do make ethernet cables, wire jacks, test jacks, etc.

Can someone let me know a resource that I can look for information on this?
