From Dottie's Weight Loss Zone: Shortbread Hearts Prep Time: 15 minutes Cook Time: 4 hours 27 minutes Makes 40 Cookies Ingredients: 1 1/2 sticks (3/4 cup) unsalted butter or margarine (not spread), at room temperature 1/2 cup confectioners' sugar 1 1/2 teaspoons vanilla extract 1 1/3 cups all-purpose flour 2 tablespoons granulated sugar Preparation: Beat butter, confectioners' sugar and vanilla in a large bowl with electric mixer until pale and fluffy. With mixer on low speed, beat in flour just until blended. Shape dough into a 1-inch-thick disk. Wrap and chill at least 4 hours or until firm enough to roll. Heat oven to 325°F. Have ungreased cookie sheet(s) ready. On a lightly floured surface with a floured rolling pin, roll the dough to 3/8-inch thickness. Cut with 1 1/2-inch heart-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheet(s). Sprinkle with granulated sugar. Reroll scraps. Bake 11 to 13 minutes until set but not browned. Remove to a wire rack to cool completely.
