Sherried Mushrooms February 26, 2014 Kidney Buzz INGREDIENTS White Mushrooms (Trimmed):3lb. Extra Virgin Olive Oil:1tbsp. Cream Sherry:3/4c. Garlic (Minced):8cloves Lemon Juice:2tbsp. Kosher Salt:1/2tsp. Freshly Ground Pepper:to taste Fresh parsley (Minced)2tbsp. PREPARATION 1. Clean mushrooms and cut in half (or quarters if large). 2. Heat oil in a large skillet or Dutch oven over medium-high heat. 3. Add mushrooms and cook, stirring, for 10 minutes. 4. Stir in sherry and garlic and continue cooking, stirring occasionally, until most of the juices have evaporated, 10 to 14 minutes. 5. Stir in lemon juice and season with salt and pepper. 6.
