OMELET IN A MUG
2 eggs, beaten
2-3 Tbsp. shredded cheddar cheese
2 Tbsp. diced cooked ham
1 Tbsp. diced green pepper
salt & pepper to taste
In a microwave safe mug coated with nonstick cooking spray,
combine all ingredients. Microwave uncovered on high for 1
minute. Stir, cook 1-1 1/2 minutes longer or until eggs are
completely set.
