Damon,
It could the the position of the reading pane that's getting in the way.
Go to the View menu and look under the Reading Pane sub menu. There's a
couple of options and swapping between Right and Bottom can sometimes help.

Subject: [access-uk] view in outlook express
Hi. very annoying problem ahead. I'm sure there is a simple answer to this.
When looking down my inbox in Outlook Express today I note that the Subject
of each email has somehow become truncated and I hear a dot dot dot where
the majority of the subject should be.
I've played around for ages but can't get the subject line to go back to its
full version.
How do I do it?
Note that maximising doesn't do anything and I can't seem to work out what
to press in the View menu if indeed that's where I look.
