Your messages are certainly arriving here in HTML.
 
When you are composing a message, what does the Title Bar of
the message say?  Does it end in "(HTML)"
 
Also, if you call up the Format Menu (Alt + o) what is
checked - Plain Text or HTML?
 
If BOTH places say Plain Text, then I'm at a loss, short of
your messages going through the control of an Exchange
Server.

        Hi All,
            Can anyone tell me why my emails show up as
html? I have the options set to send as plain text. I'm
using Office 2002 XP. And I don't use MS Word to edit
emails.
