I still can't figure out how to adjust the paper size of the pdf output which is not slide size but cuts about 20% off the right side.

This has been talked about quite a few times. The problem has nothing to do with the mac per se. It is a bug in texlive and the solution is not difficult. You need to replace a config.ps file from the texlive installation with a new one. You can get it at http://www.tug.org/texlive/bugs.html (it appears right near the top of the page).

Then you can run the following command in the Terminal (you can just copy and paste it there):

     kpsewhich --format='dvips config' config.ps

to find out where exactly the faulty file is. The output should be similar to

/usr/local/texlive/2007/texmf-config/dvips/config/config.ps

you can access the folder where this file is in the Finder by using Go- >Go to Folder... and then pasting the path (excluding the file name, i.e. /usr/local/texlive/2007/texmf-config/dvips/config) and pressing enter (or the Go button). For safety, first rename the olg config.ps to, say, config.ps.old. Then drag the file you have just downloaded to this folder and you're good to go.

By the way, welcome to the mac and to TeXShop :-)
