AD usually works best when you can keep it as simple as possible. If the default OU will work for most of your computers, I'd use it. I only make OUs when I need different GPO settings, etc. for a certain group of machines and/or users. For example, I have a separate OU for my web servers because I need different GPO settings on those machines than I do on my workstations.
