If you use Terminal Server you can connect using RDP into the box (open port
3389) you'll have full access. (you can also change the TS port to something
else so it isn't that easy for hackers to figure out) TS is secure to the
point that once you don't allow any usernames(via users tab in the admin
tools) to log into the box but yours you should be OK.

You may want to open port 25 if your web server does any mailing stuff out.

My ideal setup is:

Only port 80 and 229 (ssl, right?)

allow any port if requesting IP is my IP.
