Is she accompanied into the bathroom? If so, the assistant could roll the
paper so it has a tail or fold the end hotel style.
Have you tried the speed laces for her shoes? A lot of doctors and runners

The lace looks too long to me but you could shorten them or
you could do the same thing with her existing laces and a cord lock, You
