I don’t know about all the brands, but I have found that Scott Extra Soft (2
ply I think) with the large rolls is much easier to get started than a lot of
others.

As a blind person, I use my fingernails to gently run along the roll to find
the edge.
Also, a credit card or edge of something similar may work.

For some of the more difficult to start rolls, would a rubber fingertip, finger
cot or even a rubber band on the finger help? It might give enough traction to
grab the paper without tearing too much of it off.

on the roll and just tare it loose to get it started. I sacrifice some paper
but it gets the job done. The same principle applies to finding the end of
some rolls of tape.

Does anyone have a technique for disconnecting that first piece of toilet paper
on the roll? Is one brand less problematic than others?
This is a problem for all users myself included, but especially my clients with
vision loss and neuropathy.
