This article was submitted from my son, Joshua Loya, and contains an
announcement too.

I have been training in martial arts for over five years. I was recently
awarded my black belt in Guardian Jujitsu, Guardian Karate, and Guardian
Kobujitsu (weapons). Additionally, I have also been awarded a blue belt in
Guardian Kempo. What I have learned at the Guardian Academy of Martial Arts has completely changed my life. When I started I was 60 pounds heavier than I am now, drinking heavily, smoking, and incredibly depressed and angry. My marriage was in utter chaos, and would have eventually ended in divorce, had
I not learned some very important life principles from Soke-Kyoshi Scot
Conway, my instructor and founder of the Guardian Martial Arts.

I now help teach classes at the Guardian Academy in Spring Valley,
California, just outside San Diego. I choose to invest my time in training
others because I believe strongly in the value of the martial arts and life principles taught at our school. I also believe strongly in the character of
our instructor, and am grateful to him for his willingness to teach a
completely blind student, having never done it before. Yes, you got that
right. I am totally blind. Soke is more apt to search for a way something
can be done than dismiss it as impossible or too difficult.

Perhaps you, or someone you know, would be interested in joining us for
classes. We offer classes for children as young as 4, and have had students
older than 60. Scholarships’ are available for those in need.

+++ Tips & Tidbits from the Food Lady

Thank you for your wonderful feedback and recipes. I have a recipe for
Chocolate Cream pie , submitted by a subscriber, below my turkey tips. This would be great for those chocolate lovers at Thanksgiving. I know that some
people do not like pumpkin pie, so this would be a great addition to your
dessert menu.

Also If anyone has any other recipes for Thanksgiving they would like to
share, they can send them to me and I will post them on the website.

Food Lady’s cooking tip for roast turkey

I have found that the best way to roast a turkey is breast side down. Hmmm
how do you do this you ask? Well I have done it this way for the past
several years and it always comes out ooh so juicy. Hungry and I love the
turkey breast meat the best, and cooking it breast side down makes for very
moist and flavorful breast meat.

I also cook the stuffing separately, which allows the turkey to cook more
evenly.

Buy the best turkey you can, such as free range or organic.

Prep time is about five hours or less.

One 15 lb turkey. Adjust cooking time to the size turkey you are cooking.

Some lemon juice, olive oil or melted butter, salt and pepper, half of a
yellow onion, some tops and bottoms of a bunch of celery, a couple carrots,
and some parsley.

Bring your turkey to room temperature before cooking it. Be sure to keep it
in its wrapping until you are ready to prep it for cooking.

It is a good idea to keep your bird, whether in the fridge or bringing it to
room temp, in its plastic wrapping placed in a shallow pan. This prevents
any leakage of juices.

Remember if your turkey is frozen, to put it in the refrigerator several
days ahead of your cooking day. Usually about three days is sufficient.

Please handle your turkey with care, just like any raw meat. It is very
important not to touch anything else while handling raw turkey meat. Use
separate cutting board and utensils, or wash them thoroughly, before using
them on other foods. Wash your hands and clean up using paper towels.

I always keep soap and hand sanitizer next to my kitchen faucet. Be sure to clean your sink, faucet knobs, and counter area well with soap and hot water after you are done prepping your turkey. I wash off anywhere I think I might
have touched, like the fridge and even the soap bottle.

Remove the neck and Giblets. Use the giblets for making stock for your

stuffing. The neck can be cooked along side the turkey or saved for turkey
soup.

Some turkeys come with a plastic piece to hold the legs together. You can
leave that in place, if you are not cooking your turkey at a high
temperature. If you do remove it,

You will need to tie the legs with some kitchen string.

Preheat your oven to 400 degrees.

Wash out your turkey with water, pulling out any remaining feather stubs in
the skin. Pat it dry with paper towels.

Take your lemon juice and lather the inside of the cavity. Rub some salt and pepper inside too. Since we are cooking our stuffing separately, we can add the parsley, carrots, celery, onion (all cut up) to the inside of our bird.

I sometimes add fresh thyme and sage to the inside too.

Some foil can be used to cap the cavity opening so stuff doesn’t fall out.
Also you can use metal skewers or string, not nylon string, to close it up. Make sure the legs are tied and secure. You can tie string around your bird
to hold the wings in place, but I do not usually do this.

Spread melted butter or olive oil all over the bird, especially on the
breast side. Sprinkle salt and pepper generously all over it.

Place your turkey brest side down on a rack in a sturdy roasting pan or
broiling pan. Make sure the pan is big enough to catch all of the drippings.

Chop up your giblets and other inards, and place in a saucepan. Cover with
water, salt and pepper, and bring to boil and simmer for an hour or so. This
can be used for stock for your stuffing.

Put your turkey in the oven. For a 15 lb turkey, start your oven at 400 for
the first half hour. Reduce to 350 for the next two hours.

Then reduce the oven to 250 for the next hour to hour and a half.

If you want the breast side to be browned, you can turn the bird over and
cook at 300 for the last 15-20 minutes.

I use the long oven mitts that can be rinsed off, to turn the bird over
safely.

Start taking temperature readings with a meat thermometer, inserted deep
into the thickest part of the turkey breast and thigh, a half hour before
the turkey

Should be done. The dark meat in the thigh should be about 170 degrees to
175 degrees. The white meat in the breast should be 160 degrees to 165
degrees. If you don't have a meat

thermometer, spear the breast with a knife. The fluid should be clear, not
pink.

I use a talking meat thermometer, but after I insert it into the meat, I
take readings several times with a few seconds between readings. I find the talking thermometers to need to stay in the bird longer than other types to
get the most accurate reading.

Don’t forget to save your turkey bones to make a turkey soup.

Chocolate Cream Pie

1/3 cup Hershey Cocoa

1/3 cup cornstarch

1 ¼ cup sugar

¼ tsp salt

2 eggs

3 cups milk

3 TBSP butter

1 ½ tsp vanilla

1 (10 inch) graham cracker pie shell

8 oz. Container of Cool Whip

Combine sugar, cocoa, salt, and cornstarch in medium saucepan. Blend in milk
and eggs until smooth. Cook and stir over medium heat until mixture boils;
boil and stir constantly for 3 minutes. Remove from heat; stir in butter and vanilla until blended. Pour into pie shell. Once pie has cooled, you can top
the whole pie with a thick layer of cool whip.
