I found an email I got from martin trodden some time ago I followed these
instructions go to general / accessibility / voiceover and scroll down to
typing style tap
Only to find that my phone had gone to direct touch typing so I was able to
put it back to standard typing again.

Hi Susan! and here is my personal solution to those jumpy letters!
Of course, I also prefer to just dictate messages but sometimes as you know,
you just can't let it off with the words that appear on the screen.
So! I have my typing mode set up so that it will only add the characters
after I take my finger off the desired one. This option doesn't suit
everyone but as I can't see the letters, I find it relatively easy to work
with and it saves me having to send apologies later.
I honestly believe that this solution will work for you Susan
