If it (the proposed 'new contact you want to add) isn't a number, but a
name; How do you then get their number from the text?
(Well, I guess you could chance it and ring them: And, if you don't wanna
talk to 'em yet, end the call ASAP. (There number will then appear under the
All button etc in your Phone log. But anyway, really, it should be made
simpler.

Hi Dominique,
A tricky one for sure, but this should do it:
* Open the Messages app
* Swipe down the list of receibed messages to the number (eg, 7774444)
you want to
create a contact for and double tap to open the message.
* Swipe over to the More Info button and double tap it.
* On the Details screen, double tap on the 7774444 button
* On the More Contact Information screen, swipe down to Create New Contact
And you know the rest!
