Whenever I try to do that, the words and sentences are all mixed up and out
of order.

On the Amazon website you can go to manage my Kindle and you should be able
to find the user guide there in a format you can work with

The Kindle guide is on your Kindle and you can read it without having to
worry about the publishers because was written by Amazon.  Having something
Kindle format doesn't necessarily mean it's not accessible through text to
speech.  It depends on whether or not the publisher has disabled the text to
Speech.  There are many things you can get in Kindle format that are
accessible to text to speech
