The easiest way by far is to back your old phone up to the cloud. Then when
you set up your new phone it will ask where it should go for your data, and
offer, iTunes, iCloud or not to back up at all.
I got my stuff back with a few taps and a couple swipes. We're still trying
to get my friend's old info from his old phone to the new one he got in
October.
He doesn't have an Apple ID and refuses to get one.
Don't believe the blurb about putting a new device next to the old one
during setup, for the transfer of data, because it didn't work.
We tried with more than a few setups and got nowhere.
Go with iCloud, that's the easiest.
