Where can you do this? I've tried double tapping with two fingers and
holding in various places but can't get this to work.
But the original double-tap and hold on the Home button still works okay on
my 7 inch Fire.

The Alexa app is for enabling skills and other things. To use Alexa on your
tablet, you won't need to say the wake word. The gesture used to be
double-tap and hold the home button, and then ask your question or give a
command. A recent update changed the Alexa gesture to double-tap and hold
with two fingers. See if that works.
