Jose,
I am assuming that you have more than one metaframe server :-)
You can shutdown and move both of the servers and move them without
interrupting your users. The DC role will automatically shift
temporarily to another metaframe server, and the farm can survive for
quite awhile without being able to contact the datastore.
Allow me to recommend that you bring up the Data Store server first.
The Data Collecter will want to build/refresh its Local Host Cache
when you power it back on, and it can't succeed if the Data Store is
unavailable. Not a critical sequence, but helpful.
