I use this product and it has worked for me with excel and word
passwords....never tried access yet...

If you did not delete the user account of the ex-employee, log in as that
user and open the database.  Go into the Security settings and add other
users.

If you know the user name you want to log in as, try opening a copy of=20
the database file in a text editor and performing a text search for that

user name.  I recently had to "break in" to an Access db, and the=20
passwords were in plain text.  I don't know if that's normal or just=20
something our db guy did wrong :)
