I think most people will build new servers if they are going to be upgrading 
the OS as well.  If you aren't and your servers are working well, then it might 
make sense to just upgrade the version of Citrix.

i always prefer a nice shiny new farm myself.  You can blend two farms together 
pretty easy with the Web Interface so client delivery isn't really a big deal 
and you get the chance to run them parallel for as long as you need. 

Upgraded servers always seem to be a little "off" in the end.  Or 6 months 
later you load some patch that goes south and the first thing everyone points 
to is the fact that it is an upgraded server and wasn't fresh. 

you can upgrade in place and have one farm with different metaframe versions or 
whatever.  It's possible and people do it, but I personally prefer new.
