For IBM shops, IBM Director has a built-in function to record a session
remotely.  I just saw this demo'd during a IBM Director/Blade Center course
last week.
 
Not sure about other vendors.

there are a load of free screen cam recorder type jobs.. if its possible for
your user to record at their desktop??

The Citrix Iris Project for MPS 4 will be able to do this in the future. Not
yet though. If you have HP Openview you can do it:

I seem to recall Aurema Armtech for Citrix can record a lot of the citrix
events. You could get a demo of it and see if it helps.
