Not really much of difference between published desktops vs published
applications especially since you can use PNA to populate the desktop with
applications that are silo'd.  Keep in mind that session sharing essentially
creates a desktop type environment if your applications are published from
the same servers anyways.

On Citrix's website they have a case study section that has tons of great examples of large scale deployments of published applications but nothing specific to published desktops. We're looking for some validation, or not, as to whether a published desktop is viable on a large scale.
