Microsoft SQL Server any version is very easy.  Open the SQL Management Studio 
or whatever the name is for your version of SQL Server, click on Databases, 
right-click Databases, new Database, give it a name, OK, done.
 
You can look at this article I wrote, and just go down to before Figure 4.

datastore for XenApp 6.5?
I can't seem to find it on citrix.com.
