Sorted; Outlook was trying to find / locate the windows search service -
we installed the file services / windows search role - bingo.
Like a true dork I have blogged about it here - hope it helps someone

A couple of things. First, I usually don't recommend installing Office
2010 (or any version of Office ) as an App-V package. If you must,
there is an Office 2010 integration kit for App-V. Second, try
sequencing it on an XP workstation. Third, perhaps move up to Windows
2008 R2 SP1 and deliver the application from that platform.

Trying to do a complete install of 2010 Pro Plus on XenApp 5.0 and 2008
SP2 x64 with our VLK
It seems to install App-V, takes nearly 2 hours then all apps seem to
open ok other than outlook .....?
Outlook runs a Just In Time install then says 'please reboot'
This process just loops for any user including admins....??
Any ideas or pointers?? We already have App-V installed already and
seesms to be wiping it entirely.....
