I'd have to say at this point it is spotty performance. The servers
seem to be doing great and then just pause for a second. It is quite
frustrating.

Beyond that it would be printing and knowing how to properly lock down
a server. Why isn't there a simple step by step. Most of us configure
our servers quite similarly. We want users running applications or
desktops and we don't want them to be able to install anything or mess
with anything.
