There are few things in the Admin advanced guide... Basically you use
DSMAINT to migrate the database, and then you will use dsmaint with the
updated .dsn for the remaining servers. This can all be done without down
time. The IMA service will need to be restarted, but that won't affect the
users that are logged on. Works really well. You can also use it to
migrate from Access to SQL.

Subject: [THIN] Moving production farm to new SQL server

We have a client with a critical farm that needs to move their SQL datastore
to a new server. Does anyone have a concise, production proven, best
practise for a seamless move? It has to be done quickly and cleanly.

thanks
