You say I need to install a patch before I install metaframe. Which
patch am I looking for?

You need to install SP3 before MF. You can do a Windows Update to.
You need to run a citrix Patch before install the metaframe. Look at
citrix.com/download
After install the Citrix Patchs and Apply the Tune.
To move the Database, make a search at knowledgebase.citrix.com for
moving database.
See: If you don't have too much applications or configuration on the
farm, you can make a=20
CHFARM to create the new farm on an other database.
But remember, the CHFARM need to be the last, the one on CD are not up
to date.

after metaframe?
2) One of the new servers is to take the place of the current
datastore server, how do I move the store?
