there is a great online system to do this.  WebCt.  I have no idea what =
their software costs to run at your school though.

It has an assignment drop box feature that works pretty well.

Remove all but 'write' perms from the student group on said folder. This
allows them to 'dump' (write) there but not view its content. Obviously
Staff needs read and write and execute. This should work for NTFS
filesystems.
