G1 to G2 is just an update of the 5x controller driver. You can add this
to the G1 and it will find it when you boot the G2.

G2 to G3 is a no go as G3's use the new Ultra320 SCSI drives and don't
support anything else. You'll have to use ghost or some other kind of
imaging solution for this jump. I use the Compaq rapid deployment pack,
which is free to use for the first 30 days I think, and this supports PXE so
no problem with boot disks.

One warning:

360 G1's do not mirror with G2's by default. You need to first update a
driver (I believe it's the NIC) and then boot it up on a G2. If you just
break a G1 and recreate on a G2, you will get BSOD.

I'm not sure if the same holds true for a G2-G3 mirror.

so you would have to pull the server out of the domain break the mirror ,
put the disk in a new machine, change the name, join the domain. Is that
correct?

Sid changes when you join the domain...

You would also have to change the SID as well

Don't forget, you can also build that server with a RAID 1 array, just break
the mirror, boot up another server with one half of the broken mirror,
rename and re-ip the server and you're in. (Network card settings need to
be refreshed to set the MAC address)

I found a kick butt boot disk that will auto-detect network drivers, and had
a lot of prebuilt NIC packages for download. You can get more info and
downloads from http://www.nu2.nu/bootdisk/ <http://www.nu2.nu/bootdisk/>
