I have used message manager from http://www.syssol.com.au with the
exchange connector. With that you just email the word/excel/pdf
document as an attachment

MESSAGEmanager FAX allows users to send and receive faxes to and from
the Outlook Desktop just like sending an email.

Just enter the fax address, attach the file and send. 
No additional software is required on the desktop. 
Messages can be sent via the standard Outlook memo form. 
Fax addresses can be maintained in the Outlook Global or Personal
Address Books or a Contact Database.
Messages can be scheduled as urgent, normal or deferred to an off peak time. 
You can charge the cost of the fax to a job or department

This way so long as you apps can run on the fax server (PC with their
software) you do not need to consider any special requirements for a
citrix or terminal server farm as you are not adding any software to
teh farm.
