The Data Store is the Database where are the persistent Farm information is
stored.  Generally it is hosted on a SQL server...  Chances are all three
farms are using the same server.  You can also look at the License server,
stop and restarting it will not hurt anything.  Check the event logs,  it
should log licensing errors.
