is there any good documentation on setting up "Loopback Processing", or =
somewhere I can look to get an understanding of it.

Loopback Processing is an option on the Computer part of Group Policies. =
 It
allows you to set up all the Terminal Servers in their own OU and set =
the
policy on it rather than everyone.  Once that is set up when someone =
logs
onto the Terminal Server that policy will be applied but when they are
logging onto any other machine the policy doesn't take effect.

mode,
or scripts.
