ESX 3 brings official iSCSI support, so that should reduce some costs. The local sheriffs office in down is using IBM Blades with VMWare (currently ESX 2.5) to Virutalize Citrix with no complaints. The base version of ESX is now $1000 US for two processors and includes all the features you would need to start running Citrix servers on ESX. They also have more advanced versions for purchase once you realize the fully benefit of their products. If you expect medium to heavy usage of the Citrix server, avoid it. Your VM is limited to seeing a single processor (no matter how many you have) and you add 15-20% overhead.
