Well I tried ;-)

Are the documents local or remote (ie on file servers)?

Are there any filesystem level filter drivers operating - either locally
or on any file servers?

Is there any difference between opening documents that are locally on
the server, and those that are on file servers?

Does it occur whether the use is a normal user or an admin user?

What does task manager or performance monitor show as being mainly
active during this delay period.

PS: what's with your messages / mailer including lotsa whitespace -
you're causing my outlook session to spike the CPU whilst it strips it!
