From the Adobe Support page:

Support for Acrobat Products in Windows Terminal Server

Support for Acrobat products on a Windows Terminal Server depends on the
version of Acrobat:
-- Acrobat 5.0 and Acrobat Reader 5.0 are compatible with Windows 2000
Terminal Server, but only for viewing and printing PDF files. Technical
support for these products is limited to installing and starting the product
and viewing and printing PDF files.
-- Adobe Acrobat 4.0x, Adobe Acrobat Reader 4.0x, and Adobe Acrobat Business
Tools 4.0x may not work as expected on a Windows Terminal Server. Adobe does
not support these products on a Windows Terminal Server.

Windows Terminal Server has three components: the server itself, the user
interface transfer protocol, and the client. Windows Terminal Server runs
applications on the server side. Only the application's graphics, keyboard,
and mouse input are transmitted to the client. Instead of installing an
application to every desktop client, you can install the application only on
the server.

Can anyone else prove otherwise?

I've heard that 5.0.5 has Citrix issues that 5.1 fixed. You may want to
try that.
