I think the differences is akin to those with different screen readers on a Pc. For example the way mobile speak deals with information on the screen differs from Talks. Sorry I an no authority on this. I started with Talks which does a wonderful job for me so I cannot be bothered with mobile speak. I think mobile speak makes a touch screen easier to navigate than with one using Talks.
