I'm needing to format my phone as, ever since installing version 3, I've had
too many calls not coming through. So I think I'll format and install
version 3, but not over 2.5.

In most cases you do not need to uninstall old version of talks, when
installing version 3 you can definitely install it on top of 2.5. During the
instalation you get an extra question asking you if you want to replace the
old version to which, obviously you say yes. Only thing you need to do is
turn talks off, but definitely no need to uninstall it.
