In most cases you do not need to uninstall old version of talks, when installing version 3 you can definitely install it on top of 2.5. During the instalation you get an extra question asking you if you want to replace the old version to which, obviously you say yes. Only thing you need to do is turn talks off, but definitely no need to uninstall it.

Graham, I was under the illusion that to install TALKS you first had to
remove any earlier version, but perhaps this is wrong? I recently
uninstalled 2.5 to install 3 and needed sighted help for the install as I
was asked questions such as where to save the program. It only took a couple
of minutes but there was no speech assistance.
