I managed to achieve this by using the phrase:
"say good morning in Danish"
Obviously replace good morning with whatever text you want translated.

Hi Sam when I did the update last night I got voice recognition to convert
my English to Danish, my Father is Danish and is not well at the Moment he
would get a real kick out of hearing a phone do this. the problem is I can't
get it to do it this Morning.
