They do not.  As you pointed out, the Startup Disk control panels will
change the boot device (overwriting that variable in OF), but simply
booting OS X (or OS9) won't change it.  (And it's all but trivial to
boot manually into linux to re-run ybin.)

Dual-boot may be more challenging with an OldWorld Mac, but IIRC there
were few if any OldWorld G3s.
