For instance, the bongos instrument only has two sounds, high bongo and low bongo, whereas the "drum set" instrument has a lot of different sounds which you can get at by changing note head shapes. In general, most unpitched percussion instruments will only have a small number of sounds that use normal note heads. The drum set is a very special case.
