This is only true if the instrument you've chosen has these sounds mapped to
pitches with different note heads. For instance, the bongos instrument only
has two sounds, high bongo and low bongo, whereas the "drum set" instrument
has a lot of different sounds which you can get at by changing note head
shapes.

In general, most unpitched percussion instruments will only have a small
number of sounds that use normal note heads. The drum set is a very special
case.
