In the same way, they account for the variations of the supply voltage and the fabrication process. That is, the I-V and V-T tables have: 1) a "typical" column, whose data are extracted from a buffer in typical PVT (process/voltage/temperature) conditions; 2) a "max" column, whose data are extracted from a buffer in the fast PVT (process/voltage/temperature) conditions (e.g., max temperature, fast process and high supply level, or whichever mix of these conditions is fastest); 3) a "min" column, whose data are extracted from a buffer in the slow PVT (process/voltage/temperature) conditions (e.g., max temperature, fast process and high supply level, or whichever mix of these conditions is slower). Thus, you just need to set your preferred EDA tool in order to simulate with the set of data you want.
