This really does work, I often don't have a helper and I have used this
method, it sometimes takes longer but it has always worked. When people come
to my house they are impressed that even tho the dogs are excited to see me
or them, they don't jump up. It even works with puppies.

You are right about kneeing, grabbing paws, etc. The dogs love the
attention.
Get someone to help you, have the dog sitting at your side on leash. Put
the leash on the ground and stand on it only giving enough slack for him
to start to jump up, but only half way. As the person approaches, if the
dog starts to jump, the person turns away. He will correct himself. You
don't say anything. Repeat until the dog sits nicely, then praise and
reinforce. This take you out of the equation and teaches the dog he will
not get
the attention he wants until he sits quietly.
If you do not have an helper, quickly turn your back and walk away as the
dog starts to jump on you. Say nothing, just walk away. It is your
attention the dog wants, even if it is negative attention. This may take
a
while, but it always works.
